Top 10 Spring Dinners

If you live in a place where the winters can be brutal, this is the time of year when you start to realize that you’ve been in a deep hibernation mode for the last few months and you’re so ready to bust out into the warm weather of Spring.  That also means it’s time for local, fresh veggies and bright, crisp delicious dinners.  Here is a collection of some of my favorites to get you started.

I always get excited whenever Kathleen has a new recipe because everything she makes is so bright and fresh.  She tells us that this dish is customizable and you can switch up the quinoa for brown rice or farro and if you’d like to add fish or chicken – go for it!

New Potato, Spring Onion and Montgomery Cheddar Quiche

This recipe can’t be deemed ‘healthy’ but I couldn’t resist it because it’s the perfect picture of Spring! It’s heavy on the cream and cheese but that just means we have to have a smaller slice, right?

West Coast Paella  |  Simply Fresh Dinners

I love the flavors of an authentic paella dish but it was time to lighten it up with some summer ingredients and this turned out to be one of my favorite dishes ever.  Salmon,  shrimp, bacon, asparagus – what’s not super delicious about that?Untitled

Vietnamese Chicken Noodle Bowl  |   Recipe Tin Eats

When you land on Nagi’s blog be sure to take a cup of you favorite drink because you’re going to be there for awhile.  Her stunning photography is captivating and her recipes have universal appeal.  This dish is perfect for your lunch or for entertaining.  Best of all, it can be prepared ahead of time and the marinated meat can be frozen if you’re planning ahead.  Love this delicious freshness!

Pasta Salad with Tuna |  Fine Dining Lovers

While the pasta cooks, prepare these healthy ingredients for a scrumptious salad.   I buy tuna packed in water rather than oil.   The lemon juice in this dressing kicks it up a notch.

Smoked Salmon, Avocado, Lemon and Dill Linguine  |  Simply Fresh Dinners

This is for those nights when you’re super busy and cooking pasta seems like the natural solution.  Use quinoa spaghetti or linguine and you’ve got a super healthy meal.  If the kids aren’t fans of smoked salmon substitute fresh or canned.  You’ll love the freshness of this easy recipe.

Slow Cooked Spring Lamb Stew  |  Good To Know

Make a double batch of this on Sunday and you’ll have Monday’s dinner already done.  There are still some cool days ahead and this is perfect to warm up those little bellies while still keeping it fresh and healthy.

Spring Chicken Vegetable Soup with Caramelized Leeks  |  Simply Fresh Dinners

When you caramelize the leeks it adds a fun little crunch to the topping on the soup and combine it with dill and asparagus and your taste buds will be singing.  I use a rotisserie chicken for a super quick meal.  This is a truly delicious recipe!

When you visit Andrea’s blog, you’ll feel like you’re walking through her farm.  Her recipes are vibrant, healthy and lip-smacking!  I so wish I was the one holding that fork right now.  Such a lovely offering.  The ginger miso dressing is sublime.

This is the second time in one week that I have featured this recipe because it cannot be missed!  I am obsessed with this burger and I can’t wait to get it on a grill.  (Be gone, snow!)  Don’t you love that delicious food can be healthy too?  Your family is going to love this burger.

    Good Morning, dear Robyn!
    What a beautiful and bright post with all those delicious looking spring recipes. There isn’t a one that I wouldn’t try, but I believe I will begin with your smoked salmon linguine, yum yum! Then I must try that Vietnamese chicken noodle bowl, wow that is chocked full of goodness.
    I have returned home from Arizona after looking after my mother with her hand surgery. The weather was gorgeous each and every day, then I returned home to a good snow storm. It’s a good thing I love the snow, otherwise I may have been depressed. Spring has a ways to go yet for our area. March is known for being quite stormy.
    I trust all is good with you?
    I have missed visiting with you.

    MY GOODNESS! Where do I begin? Maybe that burger…or one of the soups. We had 60F degrees today, and that was unbelievable. But tomorrow, it will dip to 50+. Not bad, but cool enough for one of these green soups!

    I love the Vietnamese chicken noodle bowl. What I love about Vietnamese food are the contrasting textures with each mouthful.
