Grilled Asparagus Salsa

This is my favorite time of year for many reasons – green grass, the birds returning, leaves on the trees and best of all – fresh, local produce!  I’m so excited to be working with Barrie Hill Farms and Nicholyn Farms again this season and now that the asparagus is finally ready (we actually had snowflakes this past weekend!!), I’ll be visiting each week to bring you fresh, seasonal recipes.  Grilled Asparagus Salsa | Simply Fresh Dinners

Asparagus seems to be growing in popularity on the internet.  At this time of year, the are so many creative ways to use this delicious veggie and people are flocking to farmers’ markets to get their hands on some freshly picked ones.   I am feeling that same inspiration that hit me last year each time I went to the market.  Being surrounded by so much fresh-from-the-field produce just makes me happy!

And I have some sensational news!  Barrie Hill Farms has hired Chef Leslie to provide tastings for seasonal dishes and he and I are going to collaborate on the recipes!  I met with Les last week and his positive energy is very contagious!  Each Friday I will post a recipe that I’ve cooked and photographed at home and he will demonstrate it for customers at the market on the weekend.  How fun is that?!

I am thrilled at the opportunity to learn from a real live chef!  I still consider myself to be taking baby steps in the cooking world so this is a genuine treat for me!  Les has a wonderful sense of humor and is equally inspired by the farm’s produce.   You can read all about Chef Les here.

Grilled Asparagus Salsa | Simply Fresh Dinners

This is Les’ recipe and when I read the ingredients I knew I’d love it.  All the best parts of a great dish – fresh ingredients, strong complementary flavors with a zing of lime that you’ll find addicting.  The farm even sells Mexican Spiced Tortilla Chips made with Asparagus and they are awesome!   I’m going to be contacting the company to see if we can arrange a giveaway because you just gotta taste ’em!

Grilled Asparagus Salsa | Simply Fresh Dinners

If you don’t have a grill, you can roast the asparagus for this recipe.  There are only a few ingredients but each one packs a punch.  The taste is going to surprise you because the flavors meld together in an unexpected way.  SO darn delicious!

Grilled Asparagus and Tomato Salsa
Recipe Type: Appetizer

Serves: 6 persons
A healthy snack with strong, complementary ingredients that give you an unexpected result. You’ll get addicted to the delicious, zesty zing of every bite!
Ingredients
  • 1 lb asparagus – lightly grilled. Sliced to 1/4″
  • 4 large tomatoes – diced 1/4 “
  • 1 Serrano chili – finely chopped
  • 4 green onion – sliced thinly
  • 1/4 cup fresh cilantro – roughly chopped
  • 1 large lime – squeezed
  • Salt and pepper – season to taste
  • 1 garlic clove – finely chopped or crushed
Instructions
  1. Mix all ingredients together in a bowl and leave for 30 minutes for ingredients to infuse. Serve with Asparagus Tortilla Chips.

    I want to dig right into that bowl of salsa, I once made an asparagus salsa to go on shrimp cakes and I thought it was amazing, but I never tried it with chips. What fun that you’re working with the farm, I can’t wait to see what you and the chef come up with!

      Oh, salsa on shrimp really does sound amazing, Sue. The chef and I are challenged because we have to keep the recipes fairly simple because he’s outdoors but this first one was a big hit. I’m all about simple and it turns out so is he so it’s going to be fun!

    Congratulations on your collaboration! SEE you might just end up with a cooking show yet : ) This salsa sounds wonderful. Our second year asparagus only produced 5 stalks (that I kept myself from cutting for the greater good…) so I have had to buy some but it is so worth the purchase. Yum.       LOL, it’s all I can do to get this book out for the Fall so a cooking show would be ummm….terrifying! I had no idea so many people were growing asparagus at home. It sounds like quite a project. Is it 3 years you have to grow it before you actually pick it?

    ROBYN!!!!!! Hello sweet friend! I just looked at my blog and saw that you visited, thank you! Well, given that you did not receive notification of my recent post (two weeks now), maybe that explains why comments have dropped so drastically….(grrrr….it’s always about the numbers! )

    Thank you so much for your support and constant friendship. I am happy with our spring this year; it has to be the most beautiful I’ve ever seen in our area. Those lilacs just keep on pleasing us, and the flowers around here seem to be lasting longer than ever. Next, peonies will be mesmerizing us and I have a neighbor with a whole corner lot full of them, so once they bloom, I’m taking my clippers, a basket and I’ll going to ask permission to cut some!

    Hey, I got another “offer” from a local business to photograph their shoppe! We must talk….have a great day dearest friend! Anita

    Wow, asparagus in salsa is not something I would have thought of, but this recipe sounds fantastic. I love asparagus. It’s probably my favorite spring time veggie. I have fond memories of riding in the car with my dad, looking for fresh asparagus in the ditches of the small rural area we lived. We’d find a patch and pick away.
