Coconut Chocolate Chip Granola Bars

Granola bars filled with yummy flavours such as coconut, maple, honey, cinnamon and chocolate chips is the best way to start off the new year.

3 cups oats

2 tablespoons coconut oil (melted)

2 tablespoons coconut palm sugar

2 tablespoons maple syrup

1/4 cup raw honey

1 teaspoon vanilla

1 teaspoon cinnamon

1 cup shredded coconut

1/2 cup chocolate chip

Preheat oven to 350 F

Toast oats on a cookie sheet for 15 minutes.  Once toasted, place in large bowl and set aside.

Line a 9x9 pan with parchment paper.  Double the length so that you have enough to cover the pan as well as fold it over to cover the top as well.

Melt coconut oil in a small sauce pan on medium heat.  Add coconut sugar, maple syrup, honey, vanilla, and cinnamon.  Bring to a simmer over medium-high heat, stirring to ensure sugar dissolves.  Remove from heat.

Pour sugar mixture over oats and stir to coat evenly. Add coconut and chocolate chips and combine well.  Scrap the mixture into the prepared pan, spreading evenly.

Fold the parchment paper over the top of the granola, pressing hard to fill the corners of the pan and flatten.  Continue to press until smooth and even.

Refrigerate overnight to harden.  Cut and serve.
