Healthy Weeknight Meal Plan #2

We’re on to Week 2 already!  How was your first week of healthy meals?   I’d love to hear from you if you’re meal planning and would especially like to hear what kind of dishes you’d like to see included here.  I know feeding the family is tricky sometimes when there are so many varied tastes so I’m picking recipes that are fairly universal.

Let’s get started because I’m excited about these beautiful dishes from my blogger friends!

This fantastic chicken recipe is going to get you excited about cooking!    If you’re wanting to save time, cook this on Sunday.  Heck, you can cook two and let the family devour this on Sunday night and use the leftovers for lunches if you like.  If you choose to cook this on Monday, there is only 20 minutes prep time so it’s not as daunting as you would think.  Roasting chicken, ham, turkey and roast beef seems to be a little intimidating for some but it’s the best thing you can do for yourself.  The oven does all the work.  And your family is going to swoon when you put this on the table!

Everyone likes tilapia, right?  You’re going to fall in love with a 15 minute tilapia dinner!  When served on a bed of quinoa, you’ve got a light, fluffy, deliciously healthy dinner and time to spend with the family instead of the pots and pans.

Use the leftover chicken for this 30 minute fresh dinner.  Whole wheat or quinoa pasta is the good choice for your best nutritional value.  Kids love lots of color in the meals!

Can you believe this scrumptious bowl can be on your table in 25 minutes?  Truth!  You’re going to love the fact that this is vegetarian, filling and full of protein.   Only 7 ingredients so it’s budget-friendly as well.  What more can you ask for!

FRIDAYHomemade Pizza in Under an Hour | The View from Great Island

Homemade Pizza  |  The View from Great Island

This takes less than an hour and can be a fun project to work on with the kids as you’re all kicking back after a long week.  Promoting cooking skills and nutritional knowledge is essential to young children and this is a great way to do it without being preachy.  Besides, after they are finished university, you don’t want them moving back in with you because they can’t cook for themselves!  Delicious!

    GOODNESS! I don’t know which dish to choose for tonight….the chili or the pizza! It is going to be a bone-chiller this weekend so maybe the chili will be best. HI FRIEND!!!!!

      I love pizza on a Friday night, Anita. It’s actually going to get milder here this weekend but we had a wicked week of snow. I’m emailing you this weekend. We are so overdue for some chat and laughs!

    That pizza looks delish and I will be checking out the chili recipe. I make something similar – a black bean/sweet potato chili that is spicy and yummy. My husband will prefer your ham from your week #3 plan : )
