I’m on a chicken and turkey kick lately but I’m pretty sure you won’t mind as chicken seems to be one very popular dish!  I had some chicken thighs left over from the Moroccan Fruity Chicken Tagine recipe and I wanted to make a simple dish with loads of flavour.  Enter rosemary and lemon.  Both very strong flavours but wonderfully complementary to chicken.

 Thighs are always a good choice because they’re a reasonable price and they don’t take a lot of work but if you prefer breasts they’re great, too.  I marinated these for one hour before roasting and they were very moist and the taste was divine.  You will see some marinated artichokes tucked in alongside – I wish I had put more in there because they were delicious.  I used the jarred ones and next time I will put the whole (small jar) in with the chicken.  I know artichokes are an acquired taste so if you’re not a fan, you can leave them out.  Scallions might be nice in there instead.

I saw a recipe in Chatelaine magazine for roasted radish salad and I thought it had the right flavors to accompany the chicken.  Besides, what can be easier than tossing your main and side dishes in the oven for 25 minutes while you sip on your wine and contemplate your next quick and easy dinner?

I changed up the dressing on this salad because I love balsamic vinegar and it has just the right kick with the radishes.  (They used white wine vinegar which I thought was a bit of an odd choice.)  This salad  has only 3 ingredients – radishes, arugula and thyme but they pack a punch.  This was the first time I had roasted radishes and I loved them!  The only thing I might do a little differently next time is to cut them into smaller pieces.  That`s a big bite of radish!

The recipe is for 6- 8 people but you can double it for larger groups or cut it in half for smaller ones.  The fresh herbs in this dish gives you that summer fresh feeling packed into your cold weather comfort food – a great combination.  If you make this recipe, let me know and we can tweet it out to your friends.  Including a pic would be great, too.  Cheers!

Roasted Lemon and Rosemary Chicken Thighs and Roasted Radish Salad

  • Roasted Lemon and Rosemary Chicken Thighs
  • 8 boneless, skinless chicken thighs (you can use bone-in)
  • 1 small jar of marinated artichokes
  • 1/2 cup grapeseed oil
  • Juice and zest of 2 lemons
  • 2 cloves of garlic, minced
  • 3 tablespoons Dijon mustard
  • kosher salt and freshly ground black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 lemon, sliced thinly
  • 6-10 sprigs of rosemary (keep some to add on top after baking – for presentation)
  • Roasted Radish Salad
  • 4 cups radishes, washed, trimmed and halved
  • 1 tablespoon grapeseed oil
  • 1 cup packed arugula
  • 2 – 4 sprigs of thyme
  • 2 teaspoons white balsamic vinegar
  • kosher salt and freshly ground black pepper
Roasted Lemon and Rosemary Chicken
  1. Preheat oven to 450
  2. Wash chicken and pat dry, placing in large bowl with lid. In smaller bowl, whisk together grapeseed oil, lemon juice and zest, garlic, mustard, salt and pepper and red pepper flakes.
  3. Pour mixture over chicken, ensuring that each piece is completely covered. Cover and refrigerate for 1 hour.
  4. Arrange chicken in baking dish, tuck in artichokes, rosemary and top with lemon slices.
  5. Roast chicken and radishes in top and bottom thirds of oven, switching sheets hallway through, until golden, about 25 minutes. Internal temp of chicken should be 165 F.
Roasted Radish Salad
  1. Toss radishes with oil and salt and pepper. Place on baking sheet. (see above for directions on roasting)
  2. When done, transfer radishes into a large bowl. Stir in arugula and thyme and drizzle with white balsamic vinegar. (your can use regular balsamic, I just didn’t want to change the color of the salad). Toss to coat.

    Simple and delightful . . . and I have not roasted radishes either. Always have chicken thighs around, my Meyer lemon still has a couple of lemons hanging on the tree and rosemary and thyme come from the garden also: easy-peasy and it looks delicious!!

    Your chicken looks delicious and I know I will love it because I make a very similar dish! We go through a lot of lemon and chicken in this house and artichoke hearts are a big favorite too, but I often use capers in my lemony chicken creations. Your radish salad looks intriguing.     Oh yeah…this is going on my “gotta make” list. It looks absolutely amazing Robyn. I always prefer chicken thighs to breast. I know breast are a leaner choice, but thighs have more flavor and stay juicier. By the way…I loooove artichokes, so I wouldn’t change a thing!
