This is my very favorite salad recipe. If you’re not a meat-eater, skip the steak and you’l still have a plate full of deliciousness. The maple syrup on the veggies add a delicious sweetness that you’ll want to taste over and over again. Ok, I’m off to get some steak now because I’m hungry!

A delicious salad that includes every color and flavor under the rainbow. Sommer loves to top cool, crisp veggies with a hot protein and I couldn’t agree more. If we want to keep our healthy eating interesting, we’ve got to add those kind of components that make it special. The family will be doing the happy dance when this goes on the table!
This salad is such a pretty dish and if you want to add more, I would toss in some chicken. I made those zucchini ribbons with a regular carrot peeler – super simple. The dressing is such a good accompaniment for this recipe and brings out the best in the healthy ingredients.
