If you’re a regular reader here, you know I LOVE soup – all soups – beef, chicken, turkey, vegetable, Italian, Chinese, consommes, chilled fruit, seafood, gazpacho….whew! I’m sure you get the picture. Most of all I love fresh ingredients in my soup because that’s what makes it most delicious.
It’s so easy to make homemade soup these days so do yourself a favour and avoid those canned ones. And if you can make your own broth, even better. My friend, Paula, who owns SoupHerb Soups, encouraged me to make large batches of chicken and beef broth and freeze it in smaller containers and I don’t know why I hadn’t done that before. So nutritious and over the top delicious!
Here’s a collection of my Top Ten Simply Fresh Soups. Enjoy!
A high protein soup that can be customized to your family’s tastes. Only forty minutes to prepare this colourful dish that is going to satisfy even hungry teenagers. Spicy, surprising, and scrumptious!
This is one of the most popular recipes on my blog and will only take you 20 minutes of prep time. I stuffed this soup with all kinds of yummy veggies and loads of fresh herbs. You’re going to make this again and again!
Take note of the special prep in this recipe. It allows for wonderful textures in the soup and strong flavors. What I love most about soup is knowing that each slurp on that spoon is full of nutritious goodness.
Another delicious soup that’s ready in 30 minutes if you use rotisserie chicken. Thank goodness for that little tasty bird! Caramelizing the leeks adds a unique flavor that will surprise and delight your taste buds. This soup is made to be a celebration of Spring but you can have it anytime. Use lots of fresh dill although from the looks of that photo it seems I overdid it a little, ha!
I wanted the purest, simplest soup possible and this is it. This vegan dish takes only 30 minutes to make and has very few ingredients. This is perfect as an appetizer to a holiday meal (I love serving it at Easter) . Did I mention it’s delicious?!
Oh my goodness, this is such a tantalizing celebration of fresh seafood! It comes together in only 30 minutes and don’t be fooled by the fancy name – it’s super simple. This is light and refreshing but also satiates your hunger in the healthiest most delightful way!
Who doesn’t love vegetable soup? This is a great soup at any time of the year but it’s especially good for those with summer gardens looking to use up their extra veggies. I’ve started freezing bags with my leftover veggies and then combining them for soups. You can create the most wonderfully flavored soup that way. This is a very satisfying soup and you’ll want seconds so make a big batch!
This soup has it’s name because I made it in the summer but it’s a great year-round soup especially because it has barley. I love barley! I love it’s texture, it’s taste and the fact that when you include it in a soup or stew it turns it into a hearty meal. Green beans are the best, too
The carrots and tomatoes are roasted in this super delicious soup and the crunchy cheese croutons are awesome! Carrots are such an important veggie to include in your diet and especially for your growing children. If you have to do some convincing, serve a grilled cheese on whole grain bread with it.
This is the first Chinese soup I’ve made and I’m definitely planning on more because the flavors rock! It is very popular on the blog and only contains 294 calories. Ten minutes of prep and ready in 30 minutes. Don’t you just love bok choy? This dish is crunchy and addictive!
