Happy Tuesday, everyone! I hope your week is off to a good start. Today we have Healthy Chicken Recipes for Summer. Better Homes and Gardens has a wonderful slide show with some great recipes for everyone’s favourite. Chicken is a healthy choice but sometimes we ruin it by including ingredients and side dishes that add far too many unwanted calories. I loved the suggestions they have and they’re all – yes, I’m going to say it – quick and easy!
Other dishes include Cilantro Lime Pasta Salad, Thai Chicken Satay and Grilled Pineapple, Tortellini and Garden Vegetable Bake, and much more. I love that so many of the big websites now include healthy, fresh and easy dishes. Three years ago when I started my blog, it was a long and arduous search for these types of recipes. We’ve come a long way, baby!
My nephews, John and Manny, who are 11 and 9 years of age respectively, made these kale chips yesterday and took some pics to share. I had been asking John for some inspirational recipes and this is a great suggestion. He has a real knack for cooking at such a young age and has a very developed palate. He seems to know just what spice will complete a dish and I’m always surprised how easily it comes to him. They are both wonderfully, healthy eaters and I love it that they prefer these to potato chips. Great job, guys!
