Corn has gotten a bad rap in the last while and Eatingwell.com has an informative article on the great debate – is corn healthy for you?
Some important facts:
- While most field corn (feed for cows, etc) is genetically modified, sweet corn (the corn we eat) is not.
- An ear of corn has the same number of calories as an apple, and less than 1/4 of the sugar.
- Anti-oxidant activity which occurs when corn is cooked helps protect the body from cancer and heart disease.
- Sweet corn is loaded with lutein and zeaxanthin, two phytochemicals that promote healthy vision. A midsize ear also offers a helpful 3-gram dose of dietary fiber.

An American art professor has created 16 ‘Frankenstein’ trees, which produce 40 different types of stone fruit.

I’ve travelled back and forth between British Columbia and Ontario quite a few times and every time I look down on the Rocky Mountains and see the pristine blue lakes I have such a desire to see them up close and photograph them. Then I came across this photo and it left me speechless.
