This week they had ground turkey on sale so I thought it was the perfect time for turkey meatballs. I love these little guys because you can make them and freeze them and can use them in any number of dishes.
Bobbi from Bam’s Kitchen got me thinking with a comment she left the other day. We were discussing the price of chicken (turkey is almost as bad) and she was suggesting we add more veggies to the recipe in order to stretch out the main ingredient. So this week I’ve added a lot of veggies to the turkey and I love the result! Not only is it a money saver but the taste was better than any of the meatballs I’ve made in the past.
I’ve been doing budget friendly meals now since the first week of January and I can’t believe how much money I’ve been saving at the market. By making up your weekly menu based on the foods that are on sale, you can save a lot! I have generally been an impulse buyer in the past and when I would see all those bright fruits and vegetables, I just loaded up the cart but seldom was I able to finish them all at home before they went bad. I really dislike waste and now I’m finding that by planning a little better I don’t come home with foods that will never be eaten.
I’ve got a craving for green onions these days so I used them instead of yellow or red and I loved the difference it made. It must be that spring flavour that they bring. Are we not all dying for spring?? Oh my gosh, this winter is just over the top crazy!
These were simple to make and only took 20 minutes in the oven. Even a novice cook can make these with great success. There are so many dishes that you can make with these. A few suggestions:
- Subs or pitas
- On a bed of rice with roasted veggies
- On a bed of spinach with a yogurt dip
- With steamed kale, pasta and a vegetable broth
I made these as an appetizer and served with an organic marinara sauce. (Yes, it was jarred! I confess – flog me now!) Sometimes it’s just quicker and easier, lol . Be sure to spray your baking sheet liberally. I didn’t put enough on mine and they stuck – hence the crooked meatballs! ha!
Next I’m making turkey burgers using many of the same ingredients but adding even more vegetables. I’m thinking some roasted red peppers would make a nice accompaniment.

- 1 lb. extra lean ground turkey
- 1 egg
- 1/2 cup panko
- 1 clove garlic, crushed
- 1/4 cup spinach, chopped
- 1/4 cup shredded carrots
- 2 green onions, chopped
- 1 tablespoon tomato paste
- 1/2 teaspoon smoked paprika
- salt and pepper
- I used chopped basil for garnish
- Preheat oven to 400 F.
- Mix all ingredients in a large bowl. Once mixed well, roll into desired size meatball.
- Place on sprayed baking sheet and place in oven or 20 minutes.
